Roasted Herb Nuts

In a large bowl until frothy and begins to hold soft peaks:
1 egg white

Add:
8 ounces pecans
8 ounces almonds
8 ounces walnuts
8 ounces cashews
1/4 cup sesame seeds
1 teaspoon thyme
1/2 teaspoon freshly ground pepper
Toss the mixture until nuts are evenly coated. Place on a lightly oiled baking sheet, separating the nuts as you arrange them. Bake at 350°, turning and stirring every 10 minutes. Bake 25 minutes.
Other herbs and spices can be used.
