Pears Baked in Red Wine
Peel leaving stem in tact:
6 firm or unripened pears

Place in baking dish.

Mix together:
1 cup light brown sugar
1/4 teaspoon cinnamon
1/2 teaspoon grated lemon rind
1 tablespoon crystallized ginger, grated

Reserve 2 tablespoons of mixture. Sprinkle remaining mixture over the pears.

Add:
1/4 cup red wine

Cover and bake at 275° for 2 hours. Uncover, baste and continue baking for 1 hour, basting occasionally.

To serve, place warm pears in individual dessert dishes. Spoon on sauce.

Garnish:
Mix together:
1 cup sour cream
2 tablespoons of the cinnamon mixture.
Place a dollop beside the pears.
