Pears Baked in Red Wine
- Peel leaving stem in tact:

firm or unripened pears |
Place in baking dish.
- Mix together:

cup light brown sugar |
| 1/4 |
teaspoon cinnamon |
| 1/2 |
teaspoon grated lemon rind |
| 1 |
tablespoon crystallized ginger, grated |
Reserve 2 tablespoons of mixture. Sprinkle remaining
mixture over the pears.
- Add:
-
Cover and bake at 275° for 2 hours. Uncover, baste
and continue baking for 1 hour, basting occasionally.
To serve, place warm pears in individual dessert
dishes. Spoon on sauce.
- Garnish:
Mix together:

tablespoons of the cinnamon mixture. |
- Place a dollop beside the pears.
