Herbed Potato Fries

In a bowl combine:

cup olive oil |
| 1/2 |
teaspoon basil |
| 1/2 |
teaspoon thyme |
| 1/2 |
teaspoon oregano |
| 1/2 |
teaspoon garlic |
| 1/2 |
teaspoon paprika |
| 1/4 |
teaspoon pepper |
- Slice
lengthwise into wedges:

medium potatoes, not pared |
- Place
in seasoned oil and cover. Shake well to coat wedges. Place
potatoes in a single layer on a cookie sheet. Bake at 350 degrees
for 15 minutes. Sprinkle on the potatoes and bake for 15 minutes
longer:

For
extra crisp potatoes bake at 425° for 30 minutes.
