Baked Pineapple in Rum
- Cut 2 fresh ripe pineapple into thin long fingers.
Lay in buttered baking dish.
Sprinkle over pineapple:

brown sugar |

teaspoon vanilla |
| 1/2 |
teaspoon lime or lemon juice |

Pour over pineapple:

- Cover dish with foil. Cut 2 slits in the foil.
Bake at 350° for 30 minutes. Uncover, bake for 10 to 15 minutes
until the syrup has reduced somewhat.
- Remove from oven. Let cool in syrup. Add:

tablespoon rum just before serving |
Garnish with mint sprigs.
