Baked Pineapple in Rum
Cut 2 fresh ripe pineapple into thin long fingers.
Lay in buttered baking dish.
Sprinkle over pineapple:
1 1/4 cup brown sugar
1 teaspoon vanilla
1/2 teaspoon lime or lemon juice

Pour over pineapple:
1/2 cup rum, dark
 
Cover dish with foil. Cut 2 slits in the foil.
Bake at 350° for 30 minutes. Uncover, bake for 10 to 15 minutes until the syrup has reduced somewhat.
Remove from oven. Let cool in syrup. Add:
1 tablespoon rum just before serving

Garnish with mint sprigs.
